Ingredients:
2 large eggs, seasoned with salt and white pepper
2 medium tomatoes, peeled; dice and chunks
2 green onions, chopped
3 cloves garlic, minced
Sugar
Salt
White pepper powder
Avocado or vegetable oil
Written recipe for Chinese Tomato and Egg Stir-fry:
1. Heat up 1 tablespoon oil to high heat and make scrambled eggs. When they are 80% done, set aside.
2. Turn the heat down to medium, and add 1 teaspoon oil. Sauté minced garlic about 10 seconds,
3. Stir fry diced tomatoes about 2 to 3 minutes. Add a pinch of sugar and salt.
4. Add white part of green onions, and combine tomato chucks. Cook about 3 minutes.
5. Finish with green onions, salt, white pepper to your taste. Serve!
